Long before modern wheat varieties filled grocery store shelves, there were ancient grains like Khorasan wheat, a naturally golden grain with a rich, slightly nutty flavor.
But we don’t bake with Khorasan just because it tastes good. It’s also a wonderfully nutrient-rich whole grain, naturally providing protein, fiber, minerals, and other nutrients found in the grain’s germ and bran. Khorasan is particularly known for its higher protein content and its generous supply of minerals such as magnesium, zinc, and selenium.
And there’s an important difference in how we use it: we freshly mill the whole grain just before baking. Instead of starting with refined flour, we keep the naturally occurring parts of the grain together, bringing more of the grain’s flavor, texture, and nutrition into every cookie.
