Because nothing is stripped away, freshly milled flour delivers a deeper, more complex taste and a richer, more satisfying texture. It also allows for the use of whole ancient grains in their most complete form—retaining the bran, germ, and essential nutrients that are often removed in conventional white flour.

Khorasan wheat is an ancient grain—an older, less-modified relative of modern wheat—prized for its rich, nutty flavor, large kernels, and impressive nutritional profile. Believed to have originated in the Fertile Crescent (modern-day Middle East), this heritage grain has remained largely unchanged over time.
You may also see Khorasan wheat sold under the brand name Kamut®. While all Kamut is Khorasan wheat, not all Khorasan wheat is Kamut. Kamut is a trademarked, certified organic variety that meets specific quality standards.

Freshness & Storage
Our cookies are baked fresh to order without preservatives, so they’re best enjoyed within 5 days of delivery. For optimal freshness, store them in an airtight container. To extend their shelf life, you can freeze them right away and enjoy them later without compromising flavor or texture.
To keep your cookies tasting their best, store them in an airtight container at room temperature and enjoy within 5 days. When you’re ready to indulge, refresh them in a 300°F oven for a few minutes to revive that just-baked flavor and texture.
If you’ve frozen your cookies, allow them to come to room temperature before warming. For a quicker option, a brief 10–15 seconds in the microwave will soften them.

To start, we ship within the tri-state area (NY, NJ, and PA) to ensure the highest level of freshness and quality. As we grow, we plan to expand shipping to additional states.

Every ingredient is selected to be clean and minimally processed, ensuring exceptional flavor while preserving real nutritional value in every bite.
Our cookies are not suitable for certain dietary restrictions, including gluten-free or dairy-free diets. While some of the ancient grains we use are naturally lower in gluten (see our Grain Education section for more details), they are not gluten-free and are not safe for individuals with Celiac disease or wheat allergies, since all wheat contains gluten.
In addition, our recipes include butter and eggs, making them unsuitable for those with milk or egg allergies.
